Tofu Egg Salad: 1 14 oz or 16 oz Firm tofu or extra firm, drained and pressed 1/2 cup vegan mayonnaise (I use Vegenaise It's really amazing..) 4 c. Chopped fresh parsley or 2 tsp. Dried parsley 1 pickle, chopped 1-1/2 c. I prepared mustard. E. The squeeze bottle kind 1-2 stalks green onion (scallion), chopped (optional) 1 large celery stalk, diced 1-2 cloves garlic, minced 1 tsp. Salt 1/4 tsp. Crumble tofu puree and turmeric in a medium mixing bowl and add the remaining ingredients. Mix well and let cool before serving. Nile Red Lentil Soup Ingredients: 1 T. Olive oil 1 onion, finely chopped 2-3 cloves garlic, minced 1 cup red lentils, rinsed 2 t. Ground ginger 2 t. Ground cumin 2 t. Ground coriander 4 cups vegetable broth or water 2 lemon slices, 1/4 inch thick each 1 medium tomato, chopped 1/2 t. Salt and cayenne pepper to taste small handful of cilantro Preparation:-Heat oil in a medium saucepan over medium heat, high heat Saute onion and garlic until tender-Stir in lentils, ginger, cumin and coriander and mix well with onion-garlic-Add lemon slices, vegetables, tomatoes, cayenne pepper, salt and pepper, bring to a boil, reduce heat to low, cover and let simmer for 35-45 minutes, take the pot from the heat, discard lemon slices and let cool for a moment puree soup in a blender or food processor with the coriander, reserving a portion of coriander for garnish Serve in- bowls with coriander and cayenne pepper or paprika added extra, if desired Simple Waldorf Salad (I know the ingredients sound strange, but believe me, it's awesome): 1-1 / 2 apples, cut into cubes 1 TBSP lemon juice 2 medium stalks celery, cut into 1/4 "pieces 1 cup red seedless grapes, each grape halved 1/2 cup vegan mayonnaise half cup chopped walnuts. Chop the apples and place in a large mixing bowl, sprinkle with lemon juice. Add celery, grapes, walnuts, and mayonnaise. Mix well and refrigerate for an hour or two. Thai Sesame Noodles Ingredients: 1/4 cup soy sauce 2 T tahini 2 T sesame oil 1/4 teaspoon or 2 pinches of cayenne pepper 1/4 teaspoon or 2 pinches ground ginger or 1 "piece of ginger root, grated 2 cloves garlic, minced 1 pound cappellini (angel hair) 3 green onions, thinly sliced, trimmed 1 large carrot, peeled and toasted sesame seeds and red pepper flakes for garnish In a small bowl, whisk together the soy sauce, tahini, sesame oil, cayenne pepper, ginger and chopped garlic until, set aside. Batters cooking under the guidance of package, then drain in a colander and rinse with cold water to stop cooking. Noodles Give some good strong vibrations to make the water out. Pour the noodles into a large bowl and toss with the sesame soy sauce until 'that coat. Add carrots and green onions. Serve sesame noodles with sesame seeds and red pepper flakes and enjoy. "Vegan pigs in blankets" Just roll dogs vegetables in Pillsbury Crescent dough (make sure it has no butter or milk ingredients) and cook for about 15 minutes. Serve with Vegan Ranch. Vegan Ranch: 1 cup vegan mayonnaise 1/4 cup soy milk 1 teaspoon garlic powder 1/4 teaspoon salt 1 teaspoon onion powder 1/4 tsp black pepper 2 c chopped parsley free 1 tablespoon cider vinegar 1/2 c chopped fresh dill or 1/4 tsp dried Combine all ingredients in a blender or food processor until smooth and creamy. Serve hummus and pita triangles. Hummus Spinach Wraps: Get tortillas (free lard), spread a generous amount of hummus on the tortilla and fresh spinach layer on top. Sprinkle a little salt and pepper and spices you might like and roll into a "burrito" tight. Cut the roll into 2 inch pieces and serve. I hope you do very well. Maybe I should organize one of these as well.
