Nuts vegan coconut cake

HI, This is my mother's birthday in two days. I have to go see my cousin so I thought I could maybe cook there. Anyway, it can not just be any vegan cake. She can not have any type of margarine or even balance of the earth just coconut oil or olive oil. She may have no agave nectar exept of sugar (it is really sweet) and she needs a cake without fruit if possible. Also, she loves coconut cake .. Please, please help me, it is very urgent and do not give me the recipes you have tried or show me a website that you found on. Thank you very much. NO rude comments or I'll report you. And today I found … Coconut cake with coconut milk and tofu cream make this cake moist. Serve alone or with a tropical fruit salad. For the cake: 8 oz Silken tofu 1 pound plus 5 oz sugar or other sweetening matter 2 cups coconut milk 12 oz flaked coconut 1 cup canola oil 1 pound plus 4 oz From January 1 all-purpose flour / 2 c. Baking powder 1 1/2 c. Baking soda Preheat oven to 350 C. Put the first 5 ingredients in the bowl of a food processor and puree until thick and uniform texture. Add the last 3 ingredients and mix until smooth. Pour the batter into 2 (9 inch) cake pans lined with parchment paper that has been coated with nonstick cooking spray. Bake for about 1 hour. Cool. Spread icing over cooled cake. Makes 10 servings Cream Frosting 1 cup firm tofu tofu (1/2 lb) 2 Tbsp. Oil 2 tbsp. Fresh lemon juice 3-4 c. Maple syrup 1/4 c. Salt 1/2 tsp. Vanilla extract Mix all ingredients in a blender and blend until very smooth. Scrape often blender with a rubber spatula to get completely smooth frosting.
