Vegan Eggplant Recipes

Recommendations? Or just any non-vegan recipes which could be made minus animal products, or replaced with soy replacements? Thanks . After speaking to others on the web, I found the answer. Baked Fried Eggplant Ingredients (use vegan versions): 2 medium to large eggplants – peeled and sliced into rounds Fat free Italian salad dressing Seasoned breadcrumbs Vegetable cooking spray Directions: Serves: 4. Preparation time: 20-30 min. Dip eggplant slices into the fat free Italian dressing. Allow the excess dressing to drip off (too much dressing will wet the vegan breadcrumbs and make them a pain to work with). Coat the eggplant with the vegan breadcrumbs and place on a cookie sheet sprayed with vegetable spray. Lightly spray the eggplant with the vegetable spray. Bake at 400 degrees F until brown and crispy turning at least once (about 10 to 15 minutes). I often serve the eggplant with pasta and tomato sauce – but I have been known to just eat the slices off of the cookie sheet right out of the oven.

    Cauliflower Soup

    1 head cauliflower
    1 onion
    2 carrots
    2 leaves spinach
    water
    salt and pepper to taste

    Cut cauliflower into flowerets. Add cauliflower and remaining vegetables to pot. Add enough water to only cover vegetables in pot. Bring to boil and continue boiling until all are very tender, mostly about 15 minutes.

    Drain, reserving cooking water. Put vegetables in blender and blend until smooth adding more cooking water as needed for desired consistency. Add salt and pepper to taste.

    eggplant chips:
    peel eggplant, cut into slices. I mostly dip the slices in egg, but you can use oat/soy/almond milk or something like that, then dip the slices in breadcrumbs. bake the slices until they turn brown and smell amazing.
