. Basically … Please try this one. Vegan Quinoa Salad Recipe From Jolinda Hackett quinoa salad This recipe is surprisingly tasty and healthy. Whole quinoa cooks faster than most grains and is an excellent source of protein with about 11 grams of protein per cup of cooked quinoa. Do not hesitate to experhyment adding vegetables such as zucchini, corn or even green kale or spinach. Ingredients: 4 cups vegetable broth 1 1/2 cups raw whole quinoa 1 cucumber, sliced 1 red or yellow pepper, diced 1/2 cup broccoli florets lightly steamed 2 tomatoes, chopped 1/4 cup olive oil 1/3 cup lemon juice 2 cloves garlic, minced salt edge and pepper to taste (sea salt tastes better) Preparation: Cook the quinoa in vegetable broth until it swells up to about 15 minutes, stirring occasionally. While the cooked quinoa, mix lemon juice, olive oil, garlic and salt and pepper. When the quinoa is finished cooking, allow to cool slightly then mix with vegetables and lemon juice mixture, stirring to mix well. Add salt and pepper to taste, and refrigerate before serving.
